Greens are back!

I was so excited to see some green at the yesterday! While the vendors’ tables aren’t overflowing with lettuce and spinach just yet, did have a sizeable selection of spinach, kale, beets, romaine, and beet greens. I think the sight of all that green whipped the customers into a frenzy, because within 20 minutes of the market being open Dancing Pines had completely sold out! I was lucky enough to snag some spinach, kale, and beets, and I can’t wait to see what new greenery awaits me next week!

I almost screamed out loud when I got to the market late on Sunday and there was kale left. I made this delish dish compliments of Jacques Pepin’s “Fast Food My Way” with it. Yee-haw! In other fabulous news, our chicken supplier cut our cost to $2.50 per pound for whole birds. I bought a stand alone freezer and am getting 20 (possibly more) via my meat buying co-op. Super excited!
